  • spices - Cumin, chili powder and paprika give these tacos the best flavor.
  • bell pepper - Bell pepper adds veggies to these tacos.
  • cheese - Cheese adds gooey flavor and helps bind these tacos.
  • parsley - Parsley adds fresh herby flavor.
  • white beans - White beans are the protein source for this recipe.
  • taco shells - I prefer flour tortillas but corn also works.

Substitutions

  • parsley - can be subbed with any herb you like, basil would be great in this.
  • cheddar cheese - any cheese works here.
  • green bell pepper - any pepper works here.
  • white beans - black beans would be a good substitute.

Caramelize your onions.

Add all filling ingredients to the pan and cook. Partially mash.

Add cheese to tacos, fold over and bake.

Storage instructions

You can store the extra tacos in a sealed container in your fridge for up to 2 days. To reheat the tacos microwave them for 30 seconds or bake them at 400 for 5-10 minutes. I prefer baking because this helps to crisp up the tacos.

Recipe Pro-Tips

Be patient with the caramelizing of your onions. To speed up the process I recommend adding sugar and cooking with butter. From experience I have found that a little bit of butter helps the onions to caramelize much faster.

Is french onion soup vegetarian?

Usually no because it uses beef broth. However I kept these tacos vegetarian by using white beans.

Are these tacos gluten free?

This depends on the taco shell you choose to use. Corn tortillas are gluten free but flour are not.

These French Onion White Bean Tacos are the best vegetarian taco recipe

Ingredients

  • 1 onion - finely sliced
  • 1 tablespoon butter or olive oil butter makes the onions caramelize easier
  • to taste salt
  • ¼ teaspoon sugar optional - but helps with caramelization
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 green bell pepper - finely sliced
  • ½-1 jalapeno - minced
  • 4 cloves garlic - minced
  • 1 teaspoon dried or 2 teaspoons fresh thyme leaves
  • ½ cup parsley - finely chopped
  • 1 tablespoon tomato paste
  • 1 can white beans - drained
  • 1 cup shredded cheddar or gruyere cheese gruyere cheese is more traditional but I prefer cheddar

  • 6-8 taco shells of choice

Instructions

  • Heat oil or butter over medium heat. Add onions. Cook for 10 minutes. After 10 minutes add sugar and salt. Continue to cook for 20-25 more minutes, until onions are caramelized.

  • Preheat oven to 425 degrees.

  • Add all remaining ingredients to the pan except for the beans, cheese and tomato paste. Cook for 5 minutes. Add beans and tomato paste and cook for an additional 5 more minutes.

  • Partially mash the bean mixture until it gets paste like.

  • Heat taco shells for 15-30 seconds in the microwave until warm and softened.

  • Add 2 tablespoons of filling to the shells and top with cheese. Fold tacos over and flip so the filling side is on the top. This is crucial to keep the tacos closed.

  • Cook tacos for 20-30 minutes, until crisp.

  • Serve tacos with your favorite toppings and sides.

Notes

This makes 6-8 taco shells depending on how big your shells are. Mine made 7 tacos.

    Super yummy baked tacos! I don’t think they taste like French onion personally, maybe adding another onion would help, but these are still incredibly tasty! These will definitely be in our normal dinner rotation - thank you!!
