Last week I asked a couple questions on my instagram stories to see what kind of things you were looking for this new year. One of the topics that came up was healthy instant pot recipes!

I definitely feel ya. I feel like when I go to the good old pinterest and type in instant pot recipes it’s mostly unhealthy things. Don’t get me wrong, I want that cheesy mac & cheese or mashed potatoes but my hips and butt do not. haha.

So here’s the first of many healthy instant pot recipes that will make your hips dance like Shakira! 🙂

So, What is Beef Barbacoa?

Barbacoa is a way of cooking meat, usually meaning barbecued or slow cooked until tender and shredded. Beef Barbacoa is beef that is barbecued or slow cooked until is is pull apart tender.

How Do You Bake Beef Barbacoa?

There are a couple ways to make beef barbacoa. You can make it in the oven, on the grill, in the slow cooker or instant pot.

  1. Season your beef with salt and pepper.
  2. Make a chipotle sauce/marinade for the beef to slow cook in using onions, cilantro, cumin, oregano, chipotle peppers and citrus juice.
  3. Turn Instant Pot onto Saute setting.
  4. Sear the beef on both sides to lock in the juices and flavors.
  5. Pour the chipotle sauce over the browned beef, cover with beef bone broth.
  6. Turn the Saute setting off. Turn the Instant Pot on to Meat/Stew setting or Pressure Cooker setting.
  7. Cover and set timer for 1 hour.
  8. Once the meat is cooked. Use the natural release process.
  9. Remove meat and shred. Serve with cilantro and onions.

What Type of Beef Cut Do You Use for Barbacoa?

  1. Beef Brisket
  2. Beef Chuck Roast
  3. Beef Shoulder
  4. Top or Bottom Roast

What to Serve with Beef Barbacoa:

  1. Serve barbacoa on a lettuce cup with cilantro, onions, and avocado.
  2. Pile the tender barbacoa over quinoa or rice.
  3. Roast a sweet potato and top it with shredded barbacoa and pickled onions.
  4. Toast up some tortillas and make the best barbacoa tacos you’ll ever eat!

Description

Healthy Instant Pot Chipotle Beef Barbacoa Recipe done in 1 1/2 hours! Made with chipotle peppers, cilantro, cumin, citrus juice and bone broth for hands down the BEST barbacoa you’ll ever eat!

Ingredients

  • 1 tablespoon grape seed oil
  • 3.5 lb. beef brisket (or beef chuck roast will work)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 large chipotle peppers
  • 2 tablespoons adobo sauce
  • juice of 4 limes (about 1/4 cup)
  • 1/4 cup orang juice
  • 1 bunch of cilantro
  • 1 small red onion, peeled and cubed
  • 1 whole head of garlic, each clove peeled
  • 1 teaspoon ground clove
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 cup beef bone broth
  • 4 bay leaves

Instructions

  1. To a blender add, chipotle peppers, adobo sauce, lime juice, orange juice, cilantro, red onion, garlic cloves, ground clove, cumin, and oregano. Blend until mixture is smooth. Set aside.
  2. Turn your Instant Pot onto the Sauté setting and let it heat up.
  3. Season both sides of brisket with salt and pepper. (you may have to cut brisket in half to cook in two stages)
  4. Add grape seed oil to the Instant Pot.
  5. Next, add brisket to the Instant Pot and sear it on both side. Approximately 4-5 minutes per side.
  6. Once the meat is browned pour the chipotle mixture from the blender over the meat.
  7. Then add beef bone broth and top with bay leaves.
  8. Transfer the browned beef back to the Instant Pot. Seal the lid.
  9. Switch the Instant Pot over to the Meat/Stew setting (or pressure cooker setting if yours does not have Meat/Stew) and set timer for 1 hour..
  10. When it’s finished, use the the Natural Pressure Release method. Remove the lid once the pressure is completely released.
  11. Remove meat from the instant pot and shred using two forks. (discard any fat)
  12. Place shredded beef back into the instant pot. Garnish with cilantro and serve.
